After years of raising a special needs child with a rare esophageal disorder, I understand the importance of having access to food that won't make you sick.  This is all the more challenging around the holidays or special occasions.  I remember when my son first got diagnosed, I cried, partly out of fear and partly because I was sad that my child would never know the pleasure of a chocolate chip cookie.  

My mother and I baked from scratch every weekend and our specialty was the chocolate chip cookie.  

 

After the dust settled and the shock wore off, I got busy.  I had to learn how to make all of the baking flours from scratch before I could even think about making a chocolate chip cookie.  But I did it.   My son had birthday cakes, full holiday meals and snacks both sweet and savory.

The journey isn't always easy, but you aren't alone.  My little boy went from being diagnosed with failure to thrive and put on an elemental formula to being 6'2" and built like a linebacker...which means he gives the best Hugs!

So that means that if we got through it, you can too.  I don't have all of the answers and I don't have any cures.  But I do have a kitchen full of love and I would love to cook and bake for you.
